The new cellar was set apart on a dedicated area of Montezara where the company wines are born and mature.
Machinery, the large steel vats, flanked by wooden barrels. All phases of production take place here: from soft pressing, to fermentation in cooled vats, up to refinement and maturation and then bottling and labeling.
EVERY WINE HAS ITS TIME
Here in the cellar, time rules. To each wine its own time. Fermentation, maturation, refinement.
These phases go on in a never-ending succession, each phase along its own time which rules over all.
But then there are the hands, the taste, the smell and the wisdom of those who work here. It is here, and not only in the vineyard, that enologists and cellar experts leave their mark to wines, shaping their character, directing their strength.
